Shakshouka

Everybody loves a Parfait!

An easy super delicious simple breakfast that looks as beautiful as it tastes!

Ingredients:

  • 2 tbsp olive oil

  • 1/2 yellow onion, med. diced

  • 1/2 red onion, med. diced

  • 1 red bell pepper, med. diced

  • 4 garlic cloves, minced

  • 1 med sweet potato, peeled & med. diced

  • olive oil

  • 1 tbsp paprika

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1 28-ounce can whole peeled tomatoes

  • 2 tbsp harissa

  • 6-8 eggs

  • salt & pepper

  • parsley & cilantro

  • feta cheese

  • cast iron

Directions:

  • For the Sweet Potatoes:

    • Preheat the oven to 375.

    • Wash, peel, and dice the potato. Place on a baking sheet and toss with olive oil, salt, and pepper. Throw in the oven and roast for ~20 min.

Some Notes:

I came across this recipe in culinary school when we were studying cuisines of the Mediterranean. In culinary school we often studied what cuisines typically cooked, bit never focusing on their pastries or desserts. So I went on a side quest to find a delicious dessert. It was an absolute hit. I made it two more times, then the Chef ordered a cake for himself!
