Oh it’s a Cake!
An easy cake, packed with flavor and perfect for any season, or any time of day.
Ingredients:
4 large eggs
1 1/2 cups (300 grams) sugar
1/2 cup (120 milliliters) vegetable oil
2 cups (250 grams) all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (120 milliliters) orange juice, freshly squeezed
1 to 2 oranges, zested
1 tbsp vanilla
1 cap full orange blossom water
Directions:
Preheat oven to 325’F. Grease and flour bundt pan.
Beat together the eggs, sugar, and vanilla in a large bowl in a mixer until thick, usually takes about 6 min. Gradually beat in the oil and beat until thickens.
Mix dry ingredients in a separate bowl. Gradually beat into mixer ⅓ at a time. Once incorporated, add orange juice, blossom water, and zest into mixer.
Pour into pan immediately and bake for about 1 hr. Check at 45 minutes. Want it to be burnt siena color and pulling away from all the sides.
Some Notes:
I came across this recipe in culinary school when we were studying cuisines of the Mediterranean. In culinary school we often studied what cuisines typically cooked, bit never focusing on their pastries or desserts. So I went on a side quest to find a delicious dessert. It was an absolute hit. I made it two more times, then the Chef ordered a cake for himself!
