Fig Jam Caramelized Onion Grilled Cheese
Turns out all I really needed to fulfill my craving was this gourmet grilled cheese.
Ingredients:
2 slices of fresh bread of your choosing
~2 tbsp butter
~2 tbsp fig jam
1 onion, caramelized
Honey Chèvre goat cheese from Trader Joe’s
3-4 slices turkey
Directions:
To make the Caramelized Onions:
Julienne 1 yellow onion and place on a pan on med/med-low heat. Allow them to slowly begin cooking and add a pinch of salt. Very slowly, you are going to allow the onions to cook. When beginning to have some color, add some chicken or veggie stock to the pan.
For 1 onion, it will be about 1 cup of stock. Continue this process until the onions are cooked down and a rich amber color.
For the Grilled Cheese:
Preheat a pan on med low heat.
Spread butter on the outside ends of each bread slice.
Evenly spread the fig jam on each slice (add more if desired), followed by the chèvre (it’s easier to spread if it’s warm). Then add the caramelized onions to each half and the turkey and smash it all together.
Place the sandwich on the pan and allow to cook for ~4 min per side.
When the 2nd side is nearly finished, to get extra melty cheese, add a tbsp of water to the pan and cover for about 30 seconds. Make sure to tilt the pan so the bread doesn’t absorb the water.
Remove the sandwich from the pan and cut diagonally. Serve & enjoy!
