Chocolate Fudge Brownies

Now I’m not even going to pretend that I make these from scratch. I don’t often have the time, especially when working with clients. Also baking from scratch can be super finicky and has a much higher risk of failure.

My go to pick is King Arthur Gluten Free Fudge Brownie Mix! Its Gluten Free, Dairy Free, and Nut Free! And it smashes! My clients can’t even tell the difference!

If you need to make this recipe completely dairy free: use Miyoko’s Vegan Butter. It has the ability to brown like real butter and add a nice toasted nut flavor.

My other secret weapon is Vanilla Bean Paste. Never heard of it? Its more flavorful than vanilla extract and a fraction of the price of real vanilla beans! It also lasts forever in your pantry! You’ll definitely want to add this to your must need items.

Chocolate Fudge Brownies

Ingredients:

Directions:

  • Preheat the oven to 350 F. Prep the baking dish by folding and laying parchment inside the dish & spray with oil lightly.

  • In a small pot or pan brown the butter: begin melting the butter on med-low. Allow the butter to slowly brown and develop flavor. If the pan is too hot, the milk proteins will cook too fast and turn black and bitter. Allow the butter to cool slightly before adding into the batter. (So it doesn’t cook the eggs)

  • In the large bowl, crack in the eggs, water, vanilla bean paste, & salt. Whisk together until smooth. Slowly whisk in the melted butter. Once everything is mixed well begin adding the brownie mix to the bowl, 1/3 at a time. This helps to make sure everything is mixed in evenly.

  • Add the 2/3 cup of the chocolate chips to the batter and mix in well. Save the remain 1/3 of chocolate chips to evenly disperse on top. When ready, add the batter to the baking dish and sprinkle chocolate chips on top. Throw in the oven and follow time instructions on the box.

  • The brownies are finished once inserting a toothpick or fork in the center and comes out clean, usually about 30 min.

  • Take the brownies out and allow to cool for 1-20 min. You can easily life the brownies out with the parchment paper and move them to a cutting board.

  • Cut them into desired sizes and sprinkle with Maldon Salt. An add on: Serve with vanilla ice cream and raspberries!
